Development of a recipe database of eating-out meals for the Korea National Health and Nutrition Examination Survey

The aim of this paper is to introduce the methods of developing the recipe database (RD) of eating-out meals for the Korea National Health and Nutrition Examination Survey (KNHANES). The RD of KNHANES is composed of the ingredient foods of a dish and the amount of each food, which is necessary for calculating the intake of foods and nutrients from dishes consumed by subjects. Because there are some differences in ingredients according to the sources of meals, such as restaurant foods, school meals, and dishes served from workplace cafeterias, the RD of KNHANES has been developed by the sources of meals using the ingredient data surveyed from the cook of each places since 2010. The RD of KNHANES could be accessed via web-site of KNHANES, which is used for other researches.
